Week 2, Recipe 1 – Quinoa Saute

Bman and I are big fans of quinoa. It is a super food. Loaded with nutrients, this grain is packed with protein. I’ve been trying to eat more protein lately. Today was Day 1 of Metabolic Bootcamp, a two month program that meets three days a week at the ungodly hour of 6am. Needless to say, my butt was kicked on Day 1. So – more protein is needed to keep me going (aka, not dying)!

So I decided to make a quinoa saute. It is pretty much sauteed veg with a little butter, white wine, seasoning and cooked quinoa. Voila!

Quinoa Saute with Radishes, Turnip Greens and Sweet Potatoes

Ingredients
1 medium sweet potato, cut into 1/2 inch chunks
3 small carrots, cut into slices
2 T. butter, separated
1 1/2 cup sliced radishes
1 medium onion, cut up
5 cloves garlic, sliced
1 cup mushrooms, sliced
2 cups turnip greens, stems removed
1/2 cup white wine
1 cup cooked quinoa.
salt and pepper to taste

Instructions
Saute sweet potato, carrots and radishes in 1 T butter in medium pan until tender. Add onion and rest of butter until soft. Add mushrooms and garlic (garlic to taste – Bman and I believe that there’s no such thing as too much garlic). Add turnip greens and toss. add wine and cover. Allow to soften and wilt.

Add quinoa. If you have any liquid in there, the quinoa will soft it up. Season with salt and pepper. I also add about 1 T. of onion and garlic seasoning. Toss and serve. This is also great served cold as a salad.
